Quick diagnosis: the batter is moving farther than its structure can hold
A pancake that spreads into an unexpectedly wide, thin disk is giving useful information before it is even ready to flip. Watch the pour. If the pancake continues to migrate, stays pale and clings when you test the edge, the surface may be cooler than the batter needs.
Raise heat cautiously rather than jumping to the highest setting. A surface that is too hot can darken the underside before the center is ready. Let the griddle respond, then use a fresh small portion. Changing heat and batter thickness at the same moment hides which adjustment helped.
The portion is simply too large
A ladle filled above its usual level or a scoop released twice into the same circle creates a wider pancake even when batter and griddle are behaving normally.
